Bornholm, Denmark This tiny island is marooned in the middle of the Baltic Sea, a 30-minute shuttle flight from Copenhagen, and feels like a Danish Nantucket. It’s a postcard-pretty getaway, all winding streets, harbors full of rough-hewn fishing boats, and farmland that benefits from a climate that's balmier than the mainland. Indeed, the fertile soils of Bornholm supply produce to much of the headline-grabbing New Nordic restaurants in the capital, like Kadeau, whose chef-owner Nicolai Nørregaard grew up here and runs a seasonal pop-up on the beach every summer. Bornholm’s produce is best sampled during June’s Sol Over Gudhjem or Sun Over God’s Home festival, which celebrates its 10th anniversary this year. There, try locally made licorice, sea-buckthorn juice, and, of course, smoked herring—traditionally served with egg yolk and rye bread, also called Sol over Gudhjem, the dish that gave the fest its name.
