Borschtsch ist unbestritten die wichtigste Suppe der Slawen, die seit langem in der traditionellen russischen und ukrainischen Küche zu finden ist. Seine herausragende Stellung sollte nicht überraschen, denn die Geschichte des Borschtschs geht wahrscheinlich auf die Kiewer Rus' des 14. Auch wenn es heute unzählige Borschtsch-Varianten gibt, basiert die traditionellste Version auf einer Brühe aus Rind- oder Schweinefleisch, der Rüben, Kohl, Karotten und Kartoffeln zugesetzt werden. Oft wird kurz vor dem Verzehr dieser gesunden, sättigenden Suppe Sahne oder saure Sahne untergerührt. In Russland wird der Borschtsch mit einer herzhaften Scheibe Kuchen oder geröstetem Brot serviert, während er in der Ukraine häufig mit Roggenbrot und Speck gegessen wird.
