Und es ist eine "reiche" Brühe, eine von denen, die einmal im Jahr zubereitet werden.
Man hört nicht oft davon, aber es gibt viele typisch italienische Rezepte mit Karden. Das heutige Beispiel wird bei der wichtigsten Mahlzeit des Jahres, dem Weihnachtsessen, gegessen und ist sogar eines der Hauptgerichte. Brodo col cardone ist keine einfache Gemüsesuppe, sondern ein einzigartiges Gericht aus Karden, Pallottine (Kalbfleischbällchen) und Stracciatella di uova, Rührei mit Käse. Das Besondere an dieser reichhaltigen Suppe ist ihre Zubereitung: Alle Zutaten, insbesondere die Brühe, die in der Regel aus Huhn, Kapaun oder Truthahn hergestellt wird, werden lange im Voraus zubereitet, jede für sich. Die Suppe wird erst am Ende zusammengefügt, gerade lange genug, damit sie Geschmack annimmt und sofort von den zitternden Löffeln der Gäste aufgenommen wird.
