Description

Who doesn't like a little color on their plate? From the province of Pescara, precisely from Collecorvino where a dedicated festival is held every year, come pipindune e ove. A unique summer dish, these are fried peppers and beaten eggs, a triumph of red, green and yellow. Not exactly light but delicious, this dish was the typical peasant breakfast, the one taken mid-morning to take a break from work in the fields: today it is the protagonist of picnics and trips out of town, especially when used as a filling for sandwiches.
