Cantonese rice is a very popular dish in Chinese restaurants in Italy but, as you can easily imagine, it is not an original recipe. It seems, in fact, that Cantonese rice as we know it is a westernized version of the traditional chow mein, literally "fried rice", a richer and more complex dish made of basmati rice and scrambled eggs with the addition of vegetables, meat or fish, of which there are countless variations. Some have started from the same base and have enriched the recipe with peas and ham, as well as the inevitable soy sauce, thus obtaining a dish close to European tastes but at the same time delicious and full of flavor!
