La sua fondazione risale al periodo longobardo (VII- VIII DC) dal quale deriva il suo nome che significa “insediamento fortificato”. La posizione era perfetta, sulle rive del fiume Mincio e a ridosso delle colline moreniche del Garda, ottimo per costruire una Curtis Regia per la riscossione del pedaggio per l'attraversamento e navigazione sul Mincio.
Con l'arrivo degli Scaligeri vennero poi costruite le prime possenti mura per la difesa del centro e due ponti levatoi che collegavano il Borghetto alla Curtis Regia.
La decisione di costruire il ponte Visconteo, voluta fortemente dai Visconti per proteggere i territori veronesi appena conquistati, fece iniziare il declino del Borghetto: venne modificato il corso del fiume e cosi la navigazione fu bloccata. Nei secoli successivi la fonte di ricchezza venne sfruttata principalmente dalla forza idraulica del fiume, costruendo decine di mulini, e dalla pesca sul Mincio; attività che durarono fino agli inizi del xx secondo quando una nuova forma di ricchezza chiamata turismo arrivò a bussare alle porte del Borghetto.
Oggi il Borghetto e stato recuperato attraverso un attento lavoro di restauro; le antiche case ora sono diventate ristoranti, bed & breakfast e locali tipici, sempre però con il rispetto della tradizione locale.
