Ursprünglich fanden die Stierkämpfe auf der Plaza de San Francisco statt, einem historischen Platz in der Nähe des Rathauses von Sevilla.
Die erste provisorische Holzarena wurde 1730 in der Nähe des heutigen Plaza de Toros errichtet. Die Arena hatte eine rechteckige Form, was für die Stiere einen Vorteil darstellte, da sie sich in eine Ecke zurückziehen konnten. Sie galt als unsicher für die Stierkämpfer und wurde 1933 durch eine runde Arena, ebenfalls aus Holz, ersetzt.
Im Jahr 1761 wurde beschlossen, an der Stelle eines Flohmarkts eine dauerhafte Arena zu errichten.
Die prächtige Stierkampfarena, die wir heute sehen, wurde von Vicente San Martín entworfen, der ein elegantes Bauwerk im typischen Stil der Region schuf. Es sollte noch mehr als ein Jahrhundert dauern, bis die Arena 1881 fertiggestellt wurde. Heute bietet sie Platz für etwa 12 500 Zuschauer.
Am Fuße der Stierkampfarena steht eine Statue von Francisco Romero López, besser bekannt als Curro Romero, einem berühmten Torero aus Sevilla, der von den 1950er bis in die späten 1990er Jahre aktiv war.
