À l'origine, les corridas avaient lieu sur la Plaza de San Francisco, une place historique située près de l'hôtel de ville de Séville.
La première arène temporaire en bois a été construite en 1730 près de l'emplacement actuel de la Plaza de Toros. L'arène avait une forme rectangulaire, ce qui était un avantage pour les taureaux, qui pouvaient se retirer dans un coin. Elle était considérée comme dangereuse pour les toreros et en 1933, la structure a été remplacée par une arène circulaire, également en bois.
En 1761, il a été décidé d'ériger un lieu permanent à l'emplacement d'un marché aux puces.
La magnifique arène que nous voyons aujourd'hui a été conçue par Vicente San Martín, qui a créé une structure élégante dans un style régional typique. Il faudra attendre plus d'un siècle pour que les arènes soient enfin achevées, en 1881. Aujourd'hui, elles peuvent accueillir quelque 12 500 spectateurs.
Au pied des arènes se trouve une statue de Francisco Romero López, plus connu sous le nom de Curro Romero, un célèbre torero de Séville qui a été actif des années 1950 à la fin des années 1990.
