Pierwotnie walki byków odbywały się na Plaza de San Francisco, zabytkowym placu w pobliżu ratusza w Sewilli.
Pierwsza Drewniana, tymczasowa arena została zbudowana w 1730 roku w pobliżu obecnej lokalizacji Plaza de Toros. Arena miała prostokątny kształt, który był zaletą dla byków, którzy mogli wycofać się w rogu. Uznano go za niebezpieczny dla torreadorów, a w 1933 roku obiekt został zastąpiony przez okrągłą halę, również w drewnie.
W 1761 roku podjęto decyzję o wzniesieniu stałego miejsca w miejscu pchlego targu.
Wspaniała Arena walk byków, którą dziś widzimy, została zaprojektowana przez Vicente San Martín, który stworzył elegancką strukturę w typowym regionalnym stylu. Minęło ponad sto lat, zanim arena została ostatecznie ukończona w 1881 roku. Obecnie może pomieścić około 12 500 widzów.
U stóp areny byków znajduje się pomnik Francisco Romero Lópeza, lepiej znanego jako Curro Romero, słynnego torero z Sewilli, który działał od lat 50. do końca lat 90.
