Producto lácteo obtenido de la coagulación de la leche de vaca entera (no del suero) con forma de pirámide truncada o de cono truncado, con la presencia de la característica "fuscella", con un peso de hasta 2 kg; color blanco porcelana a pajizo muy pálido, según el tipo de leche utilizada; sin corteza, consistencia blanda y cremosa, color blanco leche; textura más pastosa y aterciopelada que la ricotta normal; - características químicas grasa 10 - 20%; contenido de humedad no superior al 70%, ácido láctico inferior o igual al 0,3%, proteínas 8 - 10%. - Características organolépticas: sabor más delicado que el de la ricotta típica, característicamente fresco y delicadamente dulce, fuerte olor a leche y nata, adecuado para la preparación de postres tradicionales.
La producción se consolida en la zona, donde había una floreciente explotación de ovejas y cabras, cuya leche se utilizaba originalmente para producir la "ricotta di fuscella"; hoy se utiliza leche de vaca procedente de explotaciones de la región.
