Napravljen od mlijeka od krava uglavnom hranjenih državi brado.La sazrevanje se odvija najmanje 30 dana u podrumima. Klima Sila važna je komponenta za sazrijevanje koja ovom siru daje intenzivne arome i ugodnu pikantnost.
Silano " jer ime i porijeklo proizilaze iz drevnih proizvodnih običaja na visoravni sila. To je nesumnjivo jedan od istorijskih sireva Južne Italije. Već 1500. godine Hipokrat je spomenuo proizvodnju cacija, raspravljajući o grčkoj umjetnosti proizvodnje.
Koristi se za aromatiziranje mnogih jela. Odlično se uživati i sa hljebom ili sa povrćem, ako je kratko ili srednje dobi. To je sir koji se istopi. Kombinuje se sa bijelim vinima sa omotnom aromom i ličnošću. Ako ostari, preferira srednja crvena vina.
