Fiore all’occhiello della gastronomia cittadina è il prosciutto in crosta di pane, preparato con la ricetta storica che il popolo giuliano tramanda da oltre un secolo. Le cosce suine fresche vengono profumate con aromi naturali e affumicate a caldo con trucioli di legno d'abete. Successivamente il prosciutto, disossato, viene cotto in caldaie, per poi essere completamente avvolto nell’impasto del pane e messo in forno per almeno otto ore (la cottura ideale è di un’ora per chilo). I profumi vengono trattenuti dal pane, che rende la carne morbida e gustosa.
Il prosciutto cotto in crosta va rigorosamente affettato a mano. La fetta risulta di un bel colore rosato e il sapore è dolce, delicato e leggermente affumicato. È ottimo come secondo ma dà il meglio di sé per un aperitivo o un brunch, mangiato caldo con senape o una grattugiata di cren (radice di rafano). Il gusto piacevolmente corposo richiede l'abbinamento con vini bianchi intensi, come un Isonzo Pinot Bianco o un Friulano.
L'eredità del passato asburgico di Trieste si riflette ancora oggi nel consumo abituale di prosciutto in crosta.
