Prenez une jeune pintade et, après l'avoir nettoyée et coupée en morceaux, mettez-la à dorer dans une poêle avec un mélange de saindoux, d'huile, de sauge et de romarin. Pendant la cuisson, la viande libère son eau, qu'il faut laisser sécher jusqu'à ce que les morceaux semblent coller à la poêle. Lorsque la viande a pris une belle couleur dorée, ajoutez un verre de vin blanc, salez et poivrez et couvrez avec un couvercle ou une feuille d'aluminium. Si le vin s'assèche, ajoutez un peu d'eau avec le cube de bouillon.
L'accompagnement traditionnel de ce plat est la sauce peverada, obtenue en faisant frire dans une grande quantité d'huile d'olive une tranche de soppressa assaisonnée, le foie de la pintade, avec du sel, du poivre, du persil et du jus de citron. Après quinze minutes de cuisson à feu modéré, on ajoute une cuillerée de vinaigre.
