La producción comenzó con la migración de personas del sur al valle del Po alrededor del siglo XIX. En 1861, cuando los agricultores se trasladaron al norte, comenzó una verdadera revolución agrícola que favoreció la cría y la producción de queso en muchas regiones. Esto explica el vasto territorio en el que se produce hoy el Provolone Valpadana.
El Provolone Valpadana se produce en varias regiones del valle del Po: Lombardía, Véneto, Emilia Romagna y parte de la provincia de Trento. Elaborado con leche de vaca, se presenta en dos tipos, Dolce y Piccante. Requiere una maduración mínima de 30 días y un largo periodo de maduración que, en el caso de la versión Piccante, puede alcanzar los 16 meses. Esta última tiene una gran intensidad aromática y puede ser ahumada.
Los quesos tienen una corteza dura, brillante y fina, de color pajizo o marrón, según la maduración. El aspecto exterior puede modificarse mediante un revestimiento autorizado. La pasta es compacta, semidura, de color marfil o pajizo pálido.
