Mortadella ist eine gekochte Wurst mit einer feinen Paste. Sie unterscheidet sich von den möglicherweise ähnlichen Produkten anderer Länder (den hellen Würsten) dadurch, dass die feine Paste durch das Zerkleinern des Fleisches in speziellen Fleischwölfen und nicht, wie bei ähnlichen Würsten, in Fleischwölfen oder Kuttern hergestellt wird. Dieses Verfahren führt nicht zu Emulsionen, die das Wasser oder das Fett, das zur besseren Verschmelzung der Masse hinzugefügt wurde, zurückhalten. Bei der Mortadella wird nämlich kein Wasser hinzugefügt und das Fett in Form von Würfeln eingearbeitet, wodurch eine magere Mischung entsteht. Diese werden dann in Natur- oder Kunstdärme gefüllt und stundenlang bei niedriger Temperatur gegart.
Die runde Mortadella ist mit einem Gewicht von 500 Gramm bis 1000 Kilogramm im Handel erhältlich. Der Wurstteig muss kompakt sein und eine rosa Farbe haben, die mit dem Weiß der Speckwürfel durchsetzt ist. Mortadella hat einen feinen, pikanten und würzigen Geschmack. Er sollte bis zum Verzehr kühl, aber nicht feucht, oder im Kühlschrank aufbewahrt werden.
