I Napoli kaldes de ' e chiacchiere, og vi spiser dem ved at dyppe dem i den uundgåelige sorte budding, som i dag kun består af chokolade, men tidligere også inkluderet Svineblod, en afskaffet ingrediens, som navnet skyldtes.
I romertiden blev chatter kaldt frictilia, fordi det blev stegt i svinekødsfedt. Det antages, at de blev forberedt under Saturnalia, festivaler, hvorfra vores karneval opstod. De fik dog det navn, vi kender, takket være Dronning Margaret af Savoy.
Legenden siger, at dronningen i Napoli bad den betroede hofkokk Raffaele Esposito om en dessert, der perfekt ville ledsage eftermiddagschats med sine gæster: derfra havde den kongelige kok den strålende intuition, der kom ned til os.
Ud over navnet chiacchiere er disse søde pandekager også kendt som bugie, frappe, cioffe, strufoli eller fiocchetti. Selv inden for samme region kan chatter kaldes med forskellige navne. Et eksempel? I Piemonte er det godt at kalde dem begge Riso den kuling, der ligger; i Emilia kaldes de sfrappole, intrigoni eller stegt mad. I Venedig kaldes på den anden side snakken Gala eller crostoli.
