Gli umbricelli, chiamati dialettalmente umbrichi, umbrichelli o umbrichelle, sono dei grossi spaghetti fatti a mano con farina e acqua caratteristici della provincia di Perugia e del comune di Orvieto (Terni). Il nome umbricelli deriva dal dialetto perugino umbrico che significa lombrico, per la loro forma lunga e arrotondata, appunto come un lombrico.
Gli ingredienti, farina di grano tenero ed acqua, vengono lavorati a mano su spianatoia di legno; una volta ottenuto un impasto omogeneo, con il rasagnolo viene tirata la sfoglia dello spessore di circa 5/8 mm.; si tagliano in orizzontale delle strisce di pasta (larghe circa 10 cm.), a loro volta tagliate in piccole striscette (larghe circa 1 cm.), le quali vengono tirate a mano sulla spianatoia fino a formare degli spaghetti lunghi circa 25/30 cm.
La lavorazione è laboriosa, ma il risultato è ottimo: gli umbricelli sono la testimonianza della sobrietà e la semplicità della cucina umbra di un tempo.
Le possibilità di condimento sono molto varie. Si va dall’antico battuto (pancetta battuta sul tagliere, soffritta con cipolla, carota, sedano ed erbe aromatiche a piacere), al sugo con olio, aglio, pomodoro e peperoncino (la classica arrabbiata), al sugo con i funghi o con gli asparagi. Anche il sugo a base di tartufo nero è da provare.
