Fegato, trippa ed altre interiora, vengono quindi ben ripulite, unite ed inserite nelle budella d’agnello. Anche di questo piatto sono nate numerose varianti, non solo per quanto riguarda la selezione delle carni inserite al suo interno, ma anche per quanto riguarda la sua preparazione e cottura.
C’è chi preferisce arrostirli, chi li cuoce sulla brace e chi li prepara in umido, magari con del pomodoro. Fatto sta che la sosta dal paninaro di turno per un panino con i torcinelli molisani, non si rifiuta mai.
