Si tratta di un formaggio vaccino a pasta dura e cotta di antica fattura, le prime tracce risalgono al XIII secolo – che mutua il nome da quello della sua più antica zona di produzione, l’Altopiano del Montasio. Oggi il Montasio è prodotto anche in alcune aree collinari e pianeggianti del Friuli-Venezia Giulia e del Veneto. È ottenuto dalla lavorazione di latte intero o parzialmente scremato, fatto coagulare con l’aggiunta di caglio di vitello. In seguito alla rottura in grani di piccole dimensioni, la cagliata viene cotta a una temperatura di circa 45 °C, messa a sgrondare in fascere e pressata. Dopo la salatura, che può avvenire completamente a secco o con un passaggio in bagni di salamoia, le forme vengono avviate alla stagionatura. In base al grado di maturazione si distinguono tre varietà: fresco, mezzano e stagionato o stravecchio. Il primo stagiona da due a cinque mesi, il secondo da cinque a dieci mesi, mentre il terzo affina per più di dieci mesi. Con il procedere del periodo di maturazione il sapore si intensifica passando da delicato a sapido e aromatico; la crosta si ispessisce e indurisce; la pasta da bianca si fa paglierina e poi gialla; la consistenza, prima compatta ed elastica, diviene friabile e granulosa. Viene commercializzato in forme di 5-9 chilogrammi.
