Prodotto lattiero caseario ricavato dalla coagulazione del latte intero vaccino (non del siero) avente forma tronco piramidale o tronco conica, con presenza della caratteristica "fuscella", di peso fino a 2 kg; colore bianco porcellana fino a paglierino chiarissimo, secondo il tipo di latte impiegato; assenza di crosta, consistenza morbida, cremosa, colore bianco-latte; struttura più pastosa e vellutata della normale ricotta; - caratteristiche chimiche: grasso 10 - 20%; umidità non superiore al 70%, acido lattico inferiore o uguale a 0,3%, proteine 8 - 10%. - caratteristiche organolettiche: sapore più delicato della ricotta tipica, caratteristicamente fresco e delicatamente dolce, odore spiccato di latte e crema, adatto alla preparazione di dolci tradizionali.
La produzione è consolidata nell'area dove era presente un fiorente allevamento ovicaprino, con il cui latte originariamente era prodotta la "ricotta di fuscella"; oggi viene utilizzato latte vaccino proveniente da allevamenti della regione.
