Els "furiis" són els que es troben a l'exterior, els criadors transhumants que es troben a l'aire lliure, el que es combina amb el nom d'aquest plat estès a la zona de la transhumància, Alta Vall del calore a La província D'Avellino. El Pancotto és, per tant, part de la cuina pobra però substancial; és l'únic plat tradicionalment consumit pels criadors transhumants; consisteix en pa ranci que es cuina al "callarulo", una cassola en la qual es porten a ebullició els nap tops o altres verdures, com ara espàrrecs, xicoies, vitalba i/o patates. Després de cuinar aquesta sopa de pa i diverses verdures (tops), s'extreu tota l'aigua i, en una olla a part, es prepara un saltejat amb molt d'oli, all a trossos grans i pebrots calents sencers que s'aboca bullint, en diverses vegades, sobre la barreja de pa i verdures per permetre una perfecta inreació.
