The name comes from the town of the same name, ancient Taurasia dalle vigne opime (Titus Livy). It is produced in an area of great winemaking tradition, which includes 17 municipalities, all in Irpinia. The balance between the climate, the vine and the soil appears perfect, a balance that has been harmonizing and strengthening over the centuries, until it has blended into a wine with superior characteristics, which is characterized by aromatic complexity, a velvety, full and elegant taste, and intense and delicate aromas. Today, Taurasi, vinified with the most modern technologies, but respecting tradition, is one of the very few Italian wines worthy of very long aging. The vines are, for the most part, trained by guyot or spurred cordon in specialized, thick-grafted vineyards, with yields that rarely exceed eighty quintals per hectare. It is the first wine from the south to be awarded the Denominazione di Origine Controllata e Garantita, the highest recognition that can be given to a wine. Color: intense ruby, tending to garnet until acquiring orange reflections with age; Smell: characteristic, ethereal, pleasant, more or less intense; Taste: dry, full, harmonious, balanced with persistent aftertaste; Grape varieties: Aglianico (min 85%), others (max 15 %); Minimum alcohol content. : 12,00 % ; Maximum production: 100 qli/Ha; Aging: 3 years, one of which in barrel; Taurasi , if aged for at least 4 years, of which 18 months in barrel, and possessing an alcohol content of not less than 12.50 %, may bear the words riserva on the label.
