Aqui macaroons

Introduced by the Arabs after the 13th century, they probably spread from Sicily throughout Europe. In Piedmont, amaretti are divided into many varieties, almost all of which are produced in the Asti and Alessandria areas. Amaretti di Acqui are ono handmade using sweet and bitter almonds, the sugar is placed in the refiner with one part egg white and the remaining part whipped to stiff peaks. Continuously worked by hand, the dough is divided into small nuts and baked; they are then wrapped in the candy shape. The excellence of the production is to be found in the right amount of ingredients that give the right balance of bitter-sweet.
