Inside La Rocca Palace, as of 2019, there are new specially dedicated spaces called "Cantieri Sultano." These 150 square meters house a hot kitchen and a cold laboratory, where new dishes are developed and cooking and pastry are studied in depth. There is also a lounge with a bar and dehors, reserved for guests and customers of the restaurant. The Cantieri are flexible and can also adapt to video shoots, photographic sets, cooking classes, meetings and gatherings, becoming a veritable yard of ideas to promote contemporary dining that has Sicilian roots and an international vocation.
