Inside La Rocca Palace, as of 2019, there are new specially dedicated spaces called "Cantieri Sultano." These 150 square meters house a hot kitchen and a cold laboratory, where new dishes are developed and cooking and pastry are studied in depth. There is also a lounge with a bar and dehors, reserved for guests and customers of the restaurant.
