He fishes in Sicily's centuries-old history and the historical and cultural influences that have passed through it, recomposing them in a dynamic and contemporary way, enhancing its essence without falling into decorativism.The restaurant's wine cellar offers more than 1,400 references, totaling 11,000 bottles, representing a veritable map that allows customers to travel through stories, landscapes and passions, as Head Sommelier Michela Vitale says.Among the not-to-be-missed dishes, the Triglia Maggiore di razza represents a perfect balance between the almond, an import so old it seems indigenous, and the mullet itself.The "Cantieri Sultano" are the space where chef Ciccio Sultano's ideas are born. Inside La Rocca Palace, as of 2019, there are new specially dedicated spaces called "Cantieri Sultano." These 150 square meters house a hot kitchen and a cold laboratory, where new dishes are developed and cooking and pastry are studied in depth. There is also a lounge with a bar and dehors, reserved for guests and customers of the restaurant. The Cantieri are flexible and can also adapt to video shoots, photographic sets, cooking classes, meetings and gatherings, becoming a veritable yard of ideas to promote contemporary dining that has Sicilian roots and an international vocation.
