A typical first course of the Cagliari tradition is definitely Mazzamurru, which is based on a very simple recipe with poor origins, but incredibly tasty. The base of this dish consists of stale bread, usually homemade semolina bread, which is soaked and cooked in homemade broth. Then there is a baked preparation involving alternating layers of tomato sauce, bread and grated cheese. Shaped to resemble the appearance of a lasagna, it is a perfect first course to be eaten with good full-bodied wine.
