Puccia je vrsta hljeba tipična posebno za Južnu Pugliju, nepogrešivog okusa i oblika. Postoji nekoliko verzija, sa više ili manje mrvica unutra, ovisno o području porijekla. U području Galipolja, Puccia, ovdje zvana Puccia caddhipulina, priprema se s puno mrvica i obično začinjena inćunima i kaparima, ali i tunjevinom, dodatnim Djevičanskim maslinovim uljem i paradajzom. Puccia leccese je, umjesto toga, praktično bez mrvice, jer je dizajniran da napravi prostor za obilne nadjeve. Uliata je, s druge strane, Pučija manjih dimenzija, pripremljena s uljem, crnim maslinama i papričicom od čilija: zalijevanje usta. Tradicionalno se puccia priprema 7. decembra, uoči praznika besprijekornog začeća, u kojem će se uživati sljedeći dan.
