Boršč je nesumnjivo glavna juha Slavena, koja je već dugo prisutna u tradicionalnoj ruskoj i ukrajinskoj kuhinji. Njegova istaknutost ne bi trebala biti iznenađenje, jer povijest boršča najvjerojatnije datira iz Kijevske Rusije iz 14.stoljeća. Iako se danas mogu naći bezbrojne sorte boršča, najtradicionalnija verzija temelji se na goveđoj ili svinjskoj juhi, u koju se dodaju repa, kupus, mrkva i krumpir. Krema ili kiselo vrhnje često se dodaju neposredno prije konzumiranja ove zdrave, srdačne juhe. U Rusiji se uz boršč može poslužiti ukusna kriška pite ili malo prženog kruha, dok se u Ukrajini boršč obično jede s raženim kruhom i slaninom.
