Top of the World
Sancocho is a typical dish in Dominican cuisine, but also in other Latin American countries such as Panama, Colombia, and Venezuela. It is a thick and hearty soup prepared with beef, chicken or fish, tubers such as yuca, sweet potato and banana plantain, vegetables such as corn, onion, bell bell pepper and cilantro, and spices such as oregano, cumin and parsley. The dish is prepared slowly so that all the ingredients mix well and the meat slowly melts into the soup, making it even more flavorful. Sancocho is often served with white rice and avocado, and may be accompanied by toasted bread or tostones (fried and mashed plantain banana slices). The dish is very popular throughout the Dominican Republic, especially in rural areas, and is often prepared for big occasions, such as family celebrations or religious celebrations.
