Suede

Suede is a tasty cheese produced in the Benevento area; it is characterized by a soft consistency, a particular elongated shape and a very delicate flavor. It is obtained by processing cow's milk which, once filtered and heated, is made to coagulate thanks to the addition of rennet. Subsequently the curd is extracted and reduced in strips, then it is spun and worked with hands in order to give it the characteristic elongated shape. The pieces formed are first kept in brine and then packaged and commercialized. It prefers white wines of low alcoholic content.
