The honey of Campoo-Los Valles is traditionally produced in the county of Campoo, in the community of Cantabria. This monofloral honey comes from the nectar of the species Erica cinerea, Cornish heath, cross-leaved heath, devil's thorn or tree heath.
This honey is made by collecting the raw honey from the honeycombs, leaving it still so that any impurities sink to the bottom and then filtering it and packaging in jars. Every step of the production must take place in the designated area of production thus ensuring the quality and the traceability of this exceptional honey.
